They say everything’s bigger in Texas… but do they really mean BETTER? Don’t get us wrong, we love a Friday night out at all of our favorite local spots. But Texas, or more specifically- Austin, seems to understand what a perfect Friday night really should be. We’re talking embracing an evening in with your favorite movie and good food. A few of Austin’s greats came together to create a dreamy Friday night scene. KALE PESTO PIZZA:
1 flatbread dough (Homemade is always better. We grill ours for extra flavor, but you can pan bake in a 500 degree oven for 2ish minutes to set the dough.)
4 tablespoons kale pesto (recipe below)
1/2 cup Mozzarella cheese
3 red skin potatoes, sliced (poached in ¾ water ¼ milk until tender then cooled first)
2 tablespoons caramelized onions
1 ½ cups baby arugula (dressed in lemon juice, olive oil, salt, and pepper just before serving)
2 tablespoons hot sauce
1 oz vegetable oil
2 shallots, peeled and chopped
4 cloves garlic, peeled and chopped
1# kale, cleaned and torn
2 tablespoons olive oil
4 oz white wine
2 oz vegetable stock
Salt and pepper to taste
Heat vegetable oil over medium high heat in a small pot. Add shallots and garlic, add a pinch of salt, and turn heat to medium. Cook until soft and aromatic.
Add torn kale, white wine, and vegetable stock and cover the pot. Cook for 5 minutes covered.
Remove cover and stir until 75% of liquid has cooked off.
Puree until smooth, TASTE, season, TASTE
Build pizza with potatoes and onions under the cheese.
Bake on a preheated stone at 500 degrees for about 6 minutes.
Cool for about a minute, then slice.
Top with dressed arugula and garnish with hot sauce.
